Bakery is back to usual...

Welcome to our Bakery Blog, for the full Hen Corner site, see here.
Have you seen that our new book Living the Good Life in the City: A journey to self-sufficiency is available to pre-order?
We are back to baking on Friday this week, please place your orders by Thursday 5pm, thanks :)
Marvellous Malts!
We have a couple of marvellous malts in our range, both available as loaves or rolls, and they really are rather special in both flavour and texture.
You may be forgiven for thinking that this is just a simple brown loaf, but the process of malting transforms a humble wheat flour into a sweet crunchy bake that has a hint of nuttiness (without containing nuts!).
You may have heard of, and very much enjoyed, Granary bread - yep, that's favourite of ours too, but did you know that Granary is a trademarked product of Hovis? So we can't use that name as we buy our flour from a different mill.
The malting process, however, is still the same...
Grains of ripe wheat are held back from milling into flour, soaked in water, then spread out and allowed to germinate (a bit like growing cress on damp kitchen paper). The germination process converts the starches into sugars, bringing a sweeter taste, then the process is halted by drying out the grain before added it into the flour process. Yummy!
Check our our range of malted loaves here.

Did you know that you can order your bakes weeks in advance? Have a look around the site and plan your next basket of bread!

If you haven't ordered before, our whole range can be viewed by collection (e.g. White Bread, Blended Flours, Sourdough, Special Grains, etc.), and can be ordered directly from our online store.

Don't forget that all our loaves are made with ethically sourced ingredients and everything can be frozen if you don't think you'll eat it all straight away.

Thanks and we hope to see you soon,

Sara
